In Switzerland these are a common Christmas cookie. Translated they are called Little Prussians. I wish I had the story of how they got their name but alas, I don’t know.

These cookies will take about 15 minutes to make from start to finish including backing time.
Start with some puff pastry, I used refrigerated from the grocery store. Actually, I had some that I had bought for a different purpose several months back but didn’t get to so, I naturally just tossed it in the freezer for a rainy day. Which also worked quite well.

Unroll or roll out your puff pastry dough in a rectangle. If your dough is dry, brush with a bit of water. Then top the dough with a cinnamon and sugar mixture. I used 3 Tbsp of white sugar and 1 1/2 tsp cinnamon.

Roll both ends of the dough to meet in the middle. This gives the cookies the correct shape.

Simply slice and bake. I like to slice them about 1/4 inch thick.

Sometimes you need to do a little reshaping on the backing sheet as they get pointed in the cutting process. Bake at 425 degrees for 8-10 minutes until they are golden on the edges. Let them cool on the baking sheet.

As you can see they get approval from my crowd of cookie eaters. They go great with a cup of tea.
